The purpose. Тhe purpose of this work is to determine modern methods of management and quality control of products, which allows to detect in advance the problem of reducing product quality, and to prevent it. Methodology. In carrying out the research, the methods provided by the current state standards were used. They performed a review of sources of commodity and methodological literature, monitored and systematized the data received. Results. From the above, it follows that in assessing the quality of non-food products we are dealing with more complex interconnections of consumer properties that determine the overall quality of the product, and, therefore, we are dealing with more complex approaches to its definition. In addition, we note that in assessing the quality of non-food products requires a thorough knowledge of the consumer properties of certain types of goods and knowledge of methods by which you can obtain objective data on the state of this or that indicator of consumer value. Consequently, reliable processing and analysis of test results is an important stage in the management of quality, which allows to timely identify the problem of reducing the quality of goods and prevent it. Scientific novelty. With the development of scientific and technological progress, the problem of product quality is not simplified, but on the contrary, it becomes more and more complex. Therefore, to solve it using traditional methods, ie quality control, is impossible and unreliable. Therefore, we offer a systematic approach, implementation of which is possible within the framework of quality management system. Practical significance. The construction of quality charts makes it possible to identify certain regularities in the distribution of results and enables not only to assess the quality of goods, but also to predict future results and trends in scientific progress and prevent deterioration, thereby enhancing their positive outcome
