Purpose. The purpose of the article was to study the status and prospects of quail egg production, substantiate the feasibility of using quality management tools, namely the cause-and-effect diagram of Ishikawa, to identify factors affecting the quality of quail eggs, to establish the nature of impact and importance of these factors. Methodology. The study used such methods as: information collection, its analytical processing and theoretical generalization. Statistical quality control methods (quality control tools) were also used, namely the Cause and Effect Diagram. Findings. The peculiarities of the development of quail egg production are generalized, the tendencies, ways to increase the efficiency of the industry in order to provide the population with high quality food, maintain and increase competitive positions and create conditions for entering the foreign market are highlighted. Using the Ishikawa diagram, the causal relationships between the causes of the mismatch of quail eggshells and the main and secondary causes of these mismatches were identified. It is established at what stages of the technological scheme of production they arise. Among the main (primary) causes are identified as: external conditions, conditions and quality of feeding, species and condition of birds, as well as the human factor. Originality. An analysis of the factors that shape the quality of quail eggs, the causal relationship of the formation of non-compliance of quail eggs with the requirements of regulations using the diagram of Ishikawa. The practical value. The obtained results allow producers to effectively manage the formation and preservation of the quality of quail eggs, taking into account the peculiarities of production, technical capabilities of specific enterprises, the organization of supply and sale
