Goal. Comparative assessment of the quality of samples of natural honey of domestic production for the detection of counterfeit goods. Method. During the research, the generally accepted methods of assessing the quality of natural honey, set out in current regulations and methods of comparative and systematic analysis were used. Results. The research shows that the samples of natural flower honey of the first grade, which are sold in the trade network of Kherson according to the information on the package are not certified and only samples № 1 and 3 trademarks "My Line", "Nectar", "Award" »Meet the labeling requirements. Defects were found in sample №4 of the Medic Bear brand - the grade, year of honey collection and date of its packaging were not specified. It was found that according to organoleptic quality indicators only two samples №1 and №3 of trademarks "Svoya Liniya" and "Premium" meet the requirements of the state standard of Ukraine, the other two samples №2 and №4 trademarks "Nectar" and "Medik Vedmedyk" »Not all indicators meet the established requirements, they have a foreign taste and aroma. Commodity research of natural honey purchased in supermarkets of Kherson on physical and chemical indicators showed compliance of all samples with the requirements established in domestic regulations. It is recommended that the manufacturer of the Medic Bear brand (sample №4) improve the informativeness of the packaging regarding labeling. Trade organizations should carefully inspect the goods they sell. Natural flower honey of the first grade of the Medic Bear and Nectar brands cannot be sold in the trade network due to non-compliance with organoleptic quality indicators. The practical significance of the research results lies in the possibility of their use by retailers and wholesalers. Conducted research on the quality of natural honey allows manufacturers to improve the quality of products on indicators that deviate from the normative values and eliminate deficiencies in labeling in accordance with the requirements of regulations. The results of experimental research should be used in the educational process for students of the educational program "Commodity and Trade Entrepreneurship" specialty "Entrepreneurship, Trade and Exchange Activities".
